Organic extra virgin olive oil from traditional olive varieties
Organic extra virgin olive oil from Casa Jaumet, direct producers in the Pallars. First cold pressing, our own centenary olive trees, traditional varieties such as Llargueta and Cua de Cirera. CCPAE certified.
Organic oil from our olive groves
Our oil is made from olives grown in our own fields, including restored century-old olive trees that we maintain as part of the agricultural landscape of the Pallars.
We farm following the principles of organic agriculture certified by the CCPAE, respecting the rhythms of the land and giving each harvest the time and care it needs.
Traditional Pallars varieties
It is a blended oil: rather than coming from a single variety, it combines different olives to achieve a balanced profile that represents our territory.
These include traditional Pallars varieties such as Llargueta and Cua de Cirera. Preserving and working with these varieties is also a way of keeping alive the agricultural heritage and cultivated biodiversity of the Pallars.
Green olives picked in October
We harvest the olives in October, while they are still green. At this stage oil yield is lower, but we obtain a particularly fresh and aromatic oil with the characteristic vegetal profile of green olives.
Its green colour is natural and may change over time as the oil's own pigments transform. Colour is therefore not an indicator of extra virgin olive oil quality.
First cold pressing
From harvest to production we follow a carefully controlled process. The oil is obtained through first cold pressing, avoiding high temperatures and treatments that could alter its organoleptic qualities.
The result is an organic extra virgin olive oil that preserves the character of the olives and varieties from which it is made.
Storage in stainless steel tanks
Once produced, we store the oil in stainless steel tanks until bottling. This protects the oil from light and ensures optimal storage conditions so it reaches the table at full quality.
An oil to enjoy raw
To appreciate its profile fully, we recommend enjoying it raw: on bread, in salads, with vegetables, pulses, cheese or simply as a finishing touch to a dish.
Each bottle reflects a year's work in our fields: caring for the olive trees, restoring old specimens, following each harvest and making the oil with care so the land itself can speak through it.
